Sip Spring is the taste of springtime - a bright and more refreshing modern style Tie Guan Yin due to the producer waiting a little longer before firing. This means that the leaf takes longer to lose its water content leading to more 'green' taste.

But don't think of this tea is just a bright, fresh brew because it has so much more to offer. Lemon curd and lemon oils combine with caramels and nougat and a heady yet rejuvenating floral fragrance. All of this while maintaining a lightness and purity.

I love the nuance that can be created in Tie Guan Yin through the slight adaptation of production methods. It would be worth comparing this style with the Zheng Wei Superior Iron Goddess if you want to really understand the differences and train your tastebuds in TGY.
