I imagine this when I think of my most beloved Liu Bao. Deeply fermented in baskets and aged since 2009 in Guangxi, it exhibits all of the hallmarks of what I celebrate in this famous Hei Cha.
The liquor is a deep mahogany brown, and the mouthfeel is thick and silky. The taste is a celebration of the richness of all things earthly - a mouthful of nuts, clay, starches and woodsy aromatic herbs. It leaves with a cooling and sweet finish that lasts for hours.
