How hot do you brew your White tea? For how long?

Whenever I am asked this question I have to say that it depends on what I want from my session. I have already written an article about how White tea is the Goldilocks of the tea types because the processing of the tea has to be just right to get the perfect dry leaves but when it comes to brewing it is the complete opposite.

White tea affords a really wide range of acceptable brewing parameters and each variation can produce quite different tea. Sometimes I like to flash brew Whites for a dancing aromatic elegance but other times I like to go for 5 minute brews (yes you read that right) to make the tea rich and sweet. The fabulous thing about White teas is that it is very hard to overbrew and so you can play around to achieve the right texture and flavour to suit your moods.

Temperature is similarly flexible for White tea. Brew cool for a soft, velvety and sweet tea or hit the leaves with hotter water to add warmth, strength and grip. There are no right and wrongs so play around and become a master of the different personalities of White tea.
