The first in a series of in-depth tea brewing tutorials exploring Gong Fu Brewing. In this one, we go deeper into Chaozhou tea brewing methods including the technique of crushing some of the tea leaves.

At first, the idea of crushing tea leaves may seem crazy to some Gong Fu brewers out there. But there is a logic to this technique and I try to explain some of the theories, including some of my own, as to why this method continues to be used when brewing Oolong tea in Chaozhou.
