A beautiful and hard to source tea made from Pu Erh buds. Picked from the ancient Ye Sheng Assamica Dehongensis Purple trees in Yunnan province. These trees are naturally rich in Anthocyanins to give a dark purple hue to the leaves and a light purple to the liquor.
These Dehongensis tea buds come from ancient and wild Ye Sheng tea trees which are quite powerfully astringent and bitter but once the tea is processed and sun-dried it changes to become sweet, fragrant and delicious.
This means that the tea can get a little bitter if brewed incorrectly. Please keep the water temperature low (around 85-90 celsius or 185-195 Fahrenheit) to bring out all of the complex floral notes without excessive wild tea bitterness.
Arguments may rage about whether or not we can technically call this tea a White tea. It could be argued to be a PuErh since it comes from the Assamica trees in Yunnan and it does undergo sun-drying but processing is closer to White. Currently, there is no official category for Purple tea and in any case, this is produced in a completely different way to the Purple tea being made in Kenya.
