    Grassy fruity sencha. One of the better ones i tasted.

Grown organically from a family run farm who has been producing organic tea since 1824. This Yabukita Sencha is the archetypal high grade Japanese green full of all of those fresh and punchy flavours that we love from steamed and rolled leaves.

Japanese Green teas are grown and processed in markedly different ways compared with Chinese Greens but the main variation is that the Japanese steam their leaves to halt enzyme activity whereas the Chinese bake their leaves. This leads to a fresher and more marine air profile than the warmer and nutty Chinese tea.

This Sencha is medium steamed (Chumushi) as opposed to deeper steamed (Fukamushi) or light steam (Asamushi). The level of steaming affects the flavour and texture. Lighter steamed teas are bright and thin, deep steamed teas are cloudier and thicker. This tea is steamed for a little over 30 seconds and has great balance between the bright top notes and those softer, deep flavours.

The leaves are super delicate and they will break easily so it is worth picking up a good semi fine filter in case you don't have one (too small and the filter will block, too wide and the tea will have too much broken leaf).
