Every year we source a 'Suan' or sour TGY and we love them for their dynamic aromatics from sour cream to zingy tart fruits. This year we have a Tuo Suan from Chang Keng and it is gloriously balanced with the trademark sour yoghurt and green mango taste but with a defined sweetness of raspberry and magnolia in the aroma.

Sour Sap is made in the modern Tuo Suan style and comes from Chang Keng which is in between Gan De and Xiang Hua. Gan De is known for sour teas, Xiang Hua for flowery teas and so Chang Keng seems to marry these together for a really 'complete' tasting TGY.
